The lads head out of the kitchen to the countryside, returning with pork belly and a leg of lamb, all locally sourced. On their return, Roddy makes roasted pork belly on a bed of mustard mash and accompanied by honey roasted carrots. Meanwhile, Uisdean prepares a leg of lamb coated in Moroccan-inspired spices and accompanied by couscous and chickpeas.

SLOW ROAST PORK BELLY
Cut of pork belly
2 red onion, quartered
2 banana shallots, quartered.
4 garlic cloves
4 sprigs thyme
Drizzle of olive oil
Lots of course salt and pepper
2 eating apples cut into eighths
1. Place the red onion, banana shallots, apples, thyme and garlic in a baking tray & drizzle with olive oil.
2. Score the skin of the pork belly.
3. Place the pork belly into the baking tray, on top of the other ingredients.
4. Drizzle the pork belly with olive oil and season with coarse salt & black pepper, ensuring you season well into the scored skin.
5. Cook at 230 degrees Celsius or as high as the oven can go for 20 minutes, or until the crackling begins to form, then turn the heat down low (approx. 140 Celsius) and cook for approximately 3 hours.
