AVOCADO TOAST
1 sourdough baguette sliced
4 large ripe avocados
1 tbsp lime juice
4 slices black pudding,
½ cup walnuts
Spray oil
Sea salt
Black pepper
1 tsp garlic seasoning
1 tsp onion seasoning
1 tbsp chilli oil
Juice of half a lemon
Preheat oven to 180C.
Thinly slice the baguette and place on a baking tray that has been lined with parchment paper. Spray each slice with a little oil and season with salt.
Toast in the oven for about 7 minutes, until they are brown and crispy.
While the bread is in the oven, prepare your topping.
Cut the avocados in half and remove the stone. Spoon out the flesh into a bowl or onto a chopping board, add the lime juice and mash with a fork. Season with salt, black pepper, garlic and onion seasonings.
Add the chilli oil and mix through.
Add lemon juice if you are preparing this in advance, the lemon juice will stop the avocados from discolouring.
Cook the black pudding slices on a dry frying pan for a few minutes on each side and crumble into a bowl.
Remove the toast from the oven and allow to cool, before spooning the avocado mixture, black pudding and chopped walnuts on top.
