CROISSANT, WHITE CHOCOLATE AND
WHISKY PUDDING TOPPED WITH MARMALADE
8 Egg yolks
6oz Caster sugar
脗陆 Litre Milk
脗陆 Litre Double Cream
1 Vanilla Pod
6-8 Croissants
175 grams White Chocolate Chips
1 Spot of Whisky to taste (optional)
Method
Slice Croissants and Layer them in pie dish with chocolate chips between them.
Infuse milk, cream and vanilla pods until simmering 芒聙聹Not Boiling芒聙聺
Whisk eggs and sugar until creamed
Pour warm milk and cream over eggs and sugar, whisking continuously.
Pass through a fine strainer into the pie dish
Stand in a roasting tray half full of water and cook slowly in moderate oven 190 degrees, gas mark 4, and cook 40 芒聙聯 45 minutes
Glaze with warm marmalade after cooking.
