Lining a tart tin: preparing the pastry case for shrinkage
Increasing the height of the edges of the pastry case means that if the pastry shrinks during cooking, it won't spill the filling.
-Using your thumbs, gently press the edges of the pastry case upwards, stretching the pastry so that the top of it reaches just above the rim of the tart tin.
