Inside Out London - Oysters
Oysters are one of the capital鈥檚 prized gourmet treats, but stocks of the British Native Oyster in the Thames estuary are dying out at an alarming rate. Beds of foreign varieties (like the Pacific Rock Oyster) are thriving, but our native stocks are being decimated by a combination of disease, poaching, and over-fishing. 大象传媒 London鈥檚 Wendy Hurrell meets some of the fishermen, conservationists and scientists determined to preserve the native species, as well as some of the top London chefs who have championed it.
