Lucy Worsley and Whitstable Oysters
Lucy Worsley heads to Whitstable in search of one of the most ancient foods Kent has to offer. Shellfish are among our few truly indigenous British foods and the North Kent coast is rich with this ancient bounty. The Swale estuary creates the perfect conditions for native oysters - not too salty, not too fresh - and oysters have been fished here for centuries. These days we tend to think of oysters as a luxury but they鈥檙e a food that鈥檚 fed both rich and poor.
