Moo Ping Pork

Ingredients

2 tbsp Palm sugar

1 tsp Salt

陆 Pork Tenderloin

3 cloves garlic

1 tbsp fish sauce

1tbsp coconut milk

Bamboo skewers

Method

1. Soak the bamboo skewer in water at least 1/2 hour (while you marinade the pork), to prevent them from burning while on the grill.

2. Slice the pork into thin long strips, a quarter of an inch thick. If you are planning on using the skewer, inch wide strips are better. If you are grilling the pork on the grill directly, a bigger piece will help it from falling into the coals.

3. Press or mince the garlic. Mix all ingredients together and marinade for half an hour or even over night.

4. If you are using the skewers, thread a skewer through the pork. Grill the pork until it is well done.

Grilled Lamb Salad with wild Rocket & Goats Cheese

Ingredients

1 lamb Rump or Fillet, sliced

Lamb Marinade

1tsp Curry powder

陆 tsp Cinnamon

陆 tsp Thyme

2 cloves garlic Crushed

Salad

1 bunch Wild rocket leaves

6 cherry tomatoes, halved

陆 Cucumber peeled, de-seeded & sliced

250g Goats cheese diced

2 slices Bread for Croutons

Curry oil

1 tbsp Curry Powder

100ml Olive Oil

Method

1. Marinated the Lamb with the spices

2. Pan fry or Char grill the lamb just pink

3. In a mixing bowl add the rocket, tomatoes, cucumber, croutons and goats cheese and mix

4. Once the lamb is cook how you would like it, add it to the other ingredients in the bowl and mix again

5. Place the curry powder in a small pan and cover with olive oil, warm over a low heat for the oil to infuse

6. Take a good had full of your lamb salad making sure that you get a bit of everything and place in to your plate or bowl-plate, then drizzle with some curry oil and serve. Bon

Pineapple Punch

Ingredients

50ml Condensed Milk

Pineapple Juice

Ice Cubes

METHOD

1. Put pineapple Juice & condensed milk into a blender then add some ice blend

2. Serve chilled.

Jerk Chicken

Jerk Seasoning

4 tsp Salt

4tsp Chilli powder

4 tsp Cinnamon

4tsp Sugar

4 tsp Mixed spice

4 tsp Ground coriander

4 tsp Garlic powder

4 tsp Black pepper

2 tsp mixed herbs

4-6 Chicken pieces

METHOD

1. Mix all the spices into a bowl then use as required

2. Rub the jerk seasoning all over the chicken and roast on a tray in the oven for 45 minutes until crispy
