Graham with Yabbo, Linda and Bini with her Mums Spiced Lentil 5 a day Vegetable Cake

Ingredients:

  • 200g Ondhwa flour
  • 500ml Natural Yoghurt
  • 379g Carrots (weight peeled)
  • 359g Potatoes (weight unpeeled)
  • 217g Dudi
  • 130g Frozen Peas
  • 225g Onions - sliced
  • 171g Spinach
  • 32g Ginger peeled
  • 20g Garlic - unpeeled
  • 60g Coriander chopped
  • 50g Fresh Fenugreek Leaves (Methi)
Dry ingredients to be put onto the small plate:
  • 4tsp Sugar
  • 3tsp Salt
  • 录 tsp Turmeric
  • 8g Chilli powder
  • 戮 - 1 tsp Bicarbonate Soda

  • 3 tbsp. vegetable oil
  • 3 tsp Mustard seeds
  • 3tsp Sesame Seeds
Method
  • 1. Place the Ondhwa flour and yoghurt into a large glass bowl and mix well. Cover and set aside for 4 hours.
  • 2. Firstly peel and slice the onion - leave on a plate.
  • 3. Peel and cut the potato into quarters and again with the dudi.
  • 4. Peel and roughly chop the carrots.
  • 5. Rinse the peas using warm water to help defrost the peas.
  • 6. Wash and roughly chop the spinach, fenugreek leaves and coriander.
  • 7. Then take the stalk off the green chilli, wash in cold water and chop up finely. Avoid touching your eyes when handling chillies and wash your hands thoroughly after you have finished chopping them. Peel and chop the ginger and garlic.
  • 8. Meanwhile, blitz the vegetables, coriander, methi (not the onion), garlic and ginger until it is coarsely chopped.
  • 9. Add to the ondhawa mixture. Now add the sliced onion, sugar, salt, turmeric chilli powder and bicarbonates soda. Mix thoroughly.
  • 10. Transfer into an oiled baking tin 10cm x 10cm.
  • 11. In a sauce pan add 1.5 tbsp oil and turn the heat on to a medium flame, once hot, add the mustard seeds and allow the seeds to pop and then the sesame seeds which will turn light brown in the oil for approx. 15 seconds. Using a spoon, add the spiced oil onto the Ondhwa and stir well. Flatted the top. Finally, repeat the tempering the oil with the mustard seeds and sesame seeds and pour the oil over the surface evenly.
  • 12. Cook in the oven middle of the oven for 55 minutes on 160潞C on a fan assisted setting. Cook until a golden crust is formed.
  • 13. This dish is best eaten hot but is also delicious cold with a cup of tea.
