Festive Food Friday

It's time for another of our Festive Food Friday recipes, this week with a very festive Hazel Paterson in her kitchen in Melton

These are really easy to make and are fantastic edible gifts.

Ingredients:

3 oranges
350g caster sugar
350ml water
1 cinnamon stick
1 star anise
6 cardamom pods
Half a vanilla pod or 1 tsp vanilla paste
2 blades mace or pinch freshly grated nutmeg

To decorate:
Caster sugar to dust
200g dark chocolate

Run the blade of a knife around the skin of the oranges to remove the skin in quarters and carefully slice the skin into 1cm strips.
Put the strips in a saucepan of cold water and bring to the boil, boil for 2 minutes then drain and repeat twice, this will remove the bitterness from the pith.
Squeeze the juice into a saucepan,add 350g caster sugar and 350ml water then add the spices. Heat gently whilst stirring until the sugar dissolves then increase the heat to a gentle boil and add the Orange slices.
Boil gently for about 50 minutes to an hour or until the syrup has been almost all absorbed. Carefully remove the peel using tongs one by one and place on a sheet of baking paper to dry overnight.
The following day toss the strips in the caster sugar to completely coat.
Melt the chocolate and dip each strip into it to cover about half and leave to harden on the baking parchment. These will keep happily in a sealed Tupperware box for a couple of weeks.
