Something delicious and indulgent that's also really good for you. Jo Medhurst put away her sugar and came up with something naughty but very nice....
Fruity Energy Bites
These are a fantastic alternative to chocolate bars, biscuits and snacks and will give you sustained energy, unlike sugar which gives you a boost and then a dive! Put them in your lunch box, enjoy with a glass of milk or a cup of coffee and feel energised!
6 stoned dates (about 50g) soaked in boiling water for about ten minutes, drained, then finely chopped
50g dried ready to eat apricots finely chopped
25g desiccated coconut
100g walnuts chopped very finely chopped, or bashed with a rolling pin inside a sturdy plastic bag
half a banana mashed with a fork
1 tablespoon honey
1 dessertspoon peanut butter
1 small carrot very finely grated
1 teaspoon cinnamon
grated rind of one orange
200g desiccated coconut to coat the finished bites
Place all the ingredients except for the extra desiccated coconut into a bowl and mix thoroughly. Take about a teaspoon of the mixture, enough to make a bite sized ball, roll in the palms of your hands. Put the extra desiccated coconut onto a large plate and coat the energy bites by rolling them around. Place in the fridge overnight or eat some straight away. The flavours will develop if left.
Alternatives: Use a small finely grated raw beetroot instead of a carrot and make red energy bites, they will give you a real boost! Instead of nuts, oats or finely chopped sunflower and pumpkin seeds can be used.
