Paul and Jeanne make an apple tarte tartin with Bramley apple sorbet
Bramley Apple Sorbet ingredients and method;
1kg (2lb) Bramley apples, peeled, cored and chopped
100g (3陆oz) caster sugar
cup of cider
Place prepared apples in a pan with 50ml (2fl oz) water. Sprinkle with sugar, then cover and cook over a low heat for about 10 minutes or until the apples start to collapse. Remove from the heat and allow to cool. Then stir in a cup of cider. Put the apples into a blender until it's pur茅ed. Strain the mixture and let it cool. Once cooled down, put it into an ice-cream machine until it sets. Serve with apple tarte tartin.
