Paula's Recipe of the week!
Ingredients & Method:
- 300g soft butter
- 150g castor sugar
- 150g plain flour
- 75g desiccated coconut
- 325g oats
聽Lightly butter 2 baking trays and set oven to 180oc.
Beat the butter and sugar until pale and fluffy.
Fold in the flour, coconut and oats and mix to a dough.
Roll out to just over a centimetre thick and place on trays.
Bake for 20 minutes and cool on a wire rack.
聽Honey, Pecan and Apple Granola
- 150g honey (or agave syrup and honey mixed)
- 2 tablespoons light vegetable oil
- 200g oats
- 100g chopped pecans
- Pinch cinnamon
- 50g chopped dried apple
- 25g sultanas
聽Set oven to 160 degrees celsius.
Melt the honey and oil in a saucepan.
Add the oats, nuts and cinnamon.
Mix well and place on 2 baking trays lined with parchment paper.
Cook for about 20 minutes or until golden and crisp. Cool on trays before mixing in the apple and sultanas and transferring to an airtight container.
