Strawberry and Elderflower Eton Mess
Strawberries and elderflower are bang in season right now. Our hedges are filled with elderflower and our farms are pretty much there now for Pyo fruit.
This is a super easy dessert that has great flavours with such a seasonal touch.
You can even pop them in Jam jars to watch the local cricket match or go on a picnic with.
This little English dessert is sure to impress.
Ingredients:( serves 4 )
• 300g British strawberries
• 3-4 tbsp British Elderflower cordial ( Or use your own if homemade )
• 300ml double cream
• 2 tbsp caster sugar
• 4 ready made meringue nests ( try to get better quality ones as they have chewier centres)
• 1 tbsp local english honey drizzled ( Mine was Leicestershire borage to give a floral touch )
• 2-3 sprays of elderflowers ( use a fork to take away any little critters in there )
Method:
• Chop the strawberries into quarters, place in a bowl and marinate with the elderflower cordial for about an hour.
• Whisk the double cream ( I used an electric whisk ) until only just starting to stiffen up. Add the caster sugar and continue to whisk until just slightly thicker past soft peaks.
• Crush your meringues into rough chunks.
• Add a layer of marinated strawberries into a dessert bowl ( about 2 tbsps roughly ) , then add your cream and top with the meringue.
• Repeat this process for another layer. Then use a tbsp or more if you desire of the juice from the marinated strawberries and drizzle over.
• Drizzle your honey over the top also, add your Elderflowers and you are ready to eat.
