Jamaican brown stew chicken

Brown stew chicken is not as spicy as some other classic Jamaican dishes but it鈥檚 still packed with flavour.
Serves 4听
Ingredients
路听听听听听听听听 8 pieces of chicken thighs on the bone
路听听听听听听听听 2tbs all-purpose seasoning
路听听听听听听听听 2tbs chicken seasoning
路听听听听听听听听 1tbs course black pepper
路听听听听听听听听 3tbs mild curry
路听听听听听听听听 Olive or rapeseed cooking oil
路听听听听听听听听 1 clove of garlic, crushed or grated
路听听听听听听听听 1 large cooking onion
路听听听听听听听听 1 tin tomatoes
路听听听听听听听听 1 medium sized carrot , sliced into half centimetre discs
路听听听听听听听听 2 handfuls chopped mixed sweet peppers (frozen is fine)
路听听听听听听听听 1 teaspoon scotch bonnet pepper sauce
路听听听听听听听听 1 teaspoon mixed herbs听听
Method听
Rub the all-purpose seasoning, black pepper, chicken seasoning and mild curry well into the chicken and leave in the fridge to marinade overnight.听
Heat a pan with the oil, when hot put the chicken in and brown on both sides.
Once browned, removed the chicken from the pan and set aside.听
Put the onions, garlic and carrot into pan you鈥檇 used to brown the chicken and sweat of for about a minute.听
Return the chicken into the pan, add the tomatoes, scotch bonnet pepper sauce, mixed herbs 听and mixed peppers and cook on a low heat for about 45 minutes.听
Constantly taste and add more seasoning if necessary and keep adding small amounts of water.
Serve with rice and peas.
