If you don鈥檛 like cabbage, give this a try. Perhaps it will convert you! Works well as a starter.听

Ingredients for 2听

路听听听听听听听听 1 hispi cabbage spilt length ways

路听听听听听听听听 1 white bread roll, broken up into small, bite-sized chunks

路听听听听听听听听 Handful of fresh thyme leaves chopped

路听听听听听听听听 Handful of fresh rosemary chopped finally

路听听听听听听听听 Rock salt

路听听听听听听听听 Egg yolk

路听听听听听听听听 Tsp miso paste

路听听听听听听听听 Splash of white wine vinegar

路听听听听听听听听 100ml of vegetable oil

路听听听听听听听听 Parmesan

路听听听听听听听听 Fresh truffle (if you鈥檝e got it)听

Method听

Preheat the oven to 180C.听

Put a splash of oil in a frying pan and heat on a medium high hob. Once hot, put the cabbage in the pan, turning now and again to colour each side.听

Once the cabbage is nicely coloured, season with rock salt and put in the oven for about 8minutes.听

Add the bread cubes to a small oven tray, sprinkle with the thyme & rosemary and a good pinch of salt. Add some oil and toss until well coated. Add to the oven for around 4 minutes.听听

Whilst the cabbage & croutons are in the oven make the miso mayonnaise by whisking the egg yolk, miso past and vinegar together. When mixed, slowly add the 100ml of oil, whisking constantly until it forms a light yellow, creamy mayo.听

Serve the cabbage by drizzling the mayo over the cut length, cover with croutons and then top with grated parmesan and truffle (if you鈥檝e got it!).听听
