Ingredients
6 great quality venison or pork sausages
300g of leftover bubble and squeak (roast potatoes, carrots, sprouts, swede)
1 small onion
2 cloves of garlic crushed
4 sprigs of thyme – leaves only
6 leaves of sage (finely diced)
Splash of Tabasco
2 tbsp of sweet chilli syrup
25g freshly chopped parsley
4 bantam eggs

2 egg whites
100g panko breadcrumbs
Method
Snip the end of the sausages and squeeze out the meat from the skins into a bowl. Take a medium sized pan and over a low heat, cook the diced onion in a little butter along with the crushed garlic, thyme and sage. Then add the chopped bubble and squeak and continue to fry. When the bubble and squeak mixture is soft, drain on kitchen paper and leave to cool. Mix the bubble into the venison sausage mixture and season with the Tabasco, salt, pepper, chopped parsley and sage, sweet chilli syrup. Mix well and fry off a little bit of the mixture and taste it to ensure you’re happy with the seasoning and flavour.
Meanwhile, bring a pan of water to the boil and carefully place your eggs into the boiling water for 5 minutes. Plunge them into a bowl of ice water to cool. When completely cool, peel the shell away and place them on kitchen paper to get rid of any excess water. Take some of your sausage meat and as best you can equally wrap it around your egg. When you have wrapped your eggs in the sausage mixture place them in the fridge to chill for about minutes. Take the scotch eggs from the fridge and dip them into the egg whilst carefully shaking off any excess egg then place them into the bread crumb. Carefully place them into a deep fat fryer at 180c and cook for about three minutes until really crispy and deep golden brown, now place in a pre heated oven 180c for 3-4 minutes to finish the cooking and ensure they are warm and cooked throughout.
Curry mayonnaise
100g of fresh mayonnaise
2 tbsp of sweet chilli syrup (leave the chilli bits in)
10g of good quality mild curry powder (korma is my favourite)
2g turmeric
Fresh lemon juice to taste
3 drops of Tabasco
Salt and pepper to taste.
Place the mayonnaise in a bowl and add the chilli syrup, curry powder, turmeric, give a good whisk and let the spices penetrate the mayonnaise. Finish with the lemon, Tabasco and seasoning. Taste and adjust if needed.
