Letitia's Weekly Recipe - with Walsall chef Alex Cliff (4th Sept 2022)

RECIPE:

Ingredients:
Honey
Chilli flakes
Pork belly
Salt
Pepper
Corn
Lime juice
Cream cheese
Parmesan
Chilli flakes

Instructions:
First you want to get your oven and hobs on medium heats.
Score the fat on your pork and smother in honey and chilli flakes - with a touch of salt and pepper.
Place fat side down in a pan and sear for 5 minutes turning it half way.
Place in an oven dish with more honey and bake for 15-20 minutes.
Put your corn onto boil and do this for about 10 minutes until piercing with a knife is easy.
Take out and either use skewers or a knife to push in each side.
Squeeze lime juice over the corn, spread cream cheese over the corn and roll in parmesan and chilli flakes - squeeze more lime juice over the top.
Your pork should be ready and reaching 75 degrees at this point so take out, plate up and enjoy.
