Food Thursday recipe - Cracker Toffee
Ben's 'Food Thursday' shares Emily Davis' home-made recipe.
Ritz Cracker Toffee
Ingredients:
Ritz crackers 200g box, approximately 54 crackers
Butter 225 g
Dark Brown sugar 200 g
Milk Chocolate 100 g
Dark Chocolate 100 g
Nuts, chopped To taste, about 50g
Method:
• Preheat oven to 400°F / 200°C.
• Line a large baking tray (approximately 30x44 cm) with non stick baking paper or foil. Spread out crackers in single layer on top.
• In a medium saucepan, combine butter and brown sugar and stir to mix. Bring to a boil over medium heat and let come to a rolling boil for 3 minutes. Once the mixture comes to a boil, DO NOT STIR. (Your toffee should reach 125-135°C with a candy thermometer)
• Pour brown sugar mixture over the crackers. Bake 4 minutes. While toffee is baking chop the chocolate into small pieces, then chop the nuts but do not mix the two.
• Remove from the oven and wait 1 minute. Pour chocolate bits over the top and let sit 4 minutes or until chocolate is soft (or place in the warm oven for 1 minute). Spread chocolate evenly and sprinkle nuts on top. Cool on the counter slightly and then place into the freezer to cool completely. Break into pieces.
