Food Thursday Recipe - Turkey Meatball and Veg Bake

This tasty meal can be made for less than 拢1.20 per person

This recipe is inexpensive and will cost about 拢1.20 per person. It鈥檚 healthy but still a great comforting dish to eat especially on cold nights. This is very quick to prepare and cook and simple to make. You can simply have it with crusty bread to dunk in or serve with pasta , Cous Cous or whatever you choose.

Recipe:-

Meatballs - ( makes 12 )

- 2 tbsp of cold pressed rapeseed oil or vegetable or olive oil.
- 500g of lean turkey mince ( I used less than 7% fat)
- 1/2 tsp of Dijon mustard
- 1 tbsp of tomato pur茅e
- 6-7 leaves of a fresh sprig of rosemary finely chopped
- fresh thyme leaves , roughly 3 sprigs finely chopped
- season with a little salt and cracked black pepper

Sauce
- Dice half of a red , yellow and green bell pepper
- 1 small red onion diced roughly into half inch sized chunks
- A 500g jar of tomato pasta sauce such as a bolognese one.
- A few fresh basil leaves chopped
- 1 clove garlic finely chopped
- 1 soft mozzarella ball sliced into 1/2 cm thickness
- A good handful of grated cheddar cheese ( I used mature)
- a small handful of chopped fresh parsley ( flat leaf ) to garnish

Method-

- preheat your oven to 190c

- Put all the ingredients for the meatballs into a bowl and mix well together. Make your meatballs and this should make 12.
- Add your oil to a frying pan and turn to a medium to high heat and once it鈥檚 hot add the meatballs all around the edge of the pan in like a clock formation.
- In the middle of the frying pan add the onion and peppers and fry for a few minutes.
- meanwhile Turn the meatballs as they need to be brown on each side and almost cooked through.
- add in the chopped garlic and stir.
- pop in your jar of pasta sauce, then the basil and stir. Simmer for a couple of minutes.
- Then take all the meatballs and sauce mixture and transfer to an oven proof dish. Add the mozzarella slices first on top and then cover with the cheese.
- place into the oven for 15 mins.
- After 15 mins everything will be cooked through , your mozzarella all gooey and with a little crust from your cheese.
- finish with the parsley and time to dive in!
