Food Thursday - Whipped Feta Dip

Whipped Feta Dip

Ingredients:
Feta cheese 200 g
Greek yogurt 100 g
Mayonnaise 100 g
Lemon zest 1 lemon
garlic clove, minced, 1 small
Dried dill 录 t
Dried oregano 录 tsp
Dried thyme 录 tsp
Salt 1/8 tsp
Pepper 录 tsp
Red pepper flakes 1/8 tsp

White or wholemeal pitas 1 pack
Extra virgin olive oil 50 ml
Salt To taste
Seasoning of choice (za鈥檃tar, dukkah, everything bagel) To taste

METHOD:
Heat the oven to 425 degrees F.
Place each pita flat on your cutting board and split them in half from the seam with your finger.
Brush with extra virgin olive oil & season with salt and your choice of seasoning.
Cut into triangles.
Bake in a single layer anywhere from 5 to 10 minutes, checking occasionally to turn over the pita triangles that have gained color. They are ready when lightly golden and crispy!

While pitas are in the oven make your dip.
Combine all of the ingredients in a food processor or blender and process until smooth. Taste and adjust seasoning, if necessary.
Transfer to a serving bowl and use a small spoon to create a swirl on the surface of the dip. Drizzle with olive oil and sprinkle with seasoning from your pita chips.
