As people get stocked up for Christmas, many will be filling their fridges with cheese, including a good lump of Stilton.

Nearly 60% of Stilton comes from one manufacturer, Long Clawson Dairy, a farmer owned business in Leicestershire. The team ships 3,500 tonnes in December alone.
