Nadiya Hussain's Halloumi and Spinach Curry

1. Soak halloumi in hot water.聽2. Shallow fry until crispy.聽3. Fry onions at a low heat until translucent and soft.聽4. Add ground spices and tamarind.聽5. Blend spinach and add to the onions.聽6. Mix in the halloumi.

Nadiya Hussain's Halloumi Curry with Coconut Sambal
A variation of the recipe from Nadiya's Family Favourites (Penguin Michael Joseph).聽

- 4 tbsp olive oil聽
- 2 x 250g blocks of halloumi cheese, cut into 1 cm cubes聽
- 6 cloves of garlic, chopped聽
- 2 red onions, diced聽
- 2 red peppers, diced聽
- 陆 tsp salt聽
- 陆 tsp ground turmeric聽
- 1 tsp cumin seeds聽
- 1 lemon, zest and juice聽
- 300ml water聽
- A large bunch of fresh coriander, chopped聽
- Cooked basmati rice, to serve
- 150g desiccated coconut聽
- 1 clove of garlic聽
- 1 lime, zest and juice聽
- A large handful of fresh coriander聽
