Food Thursday - chorizo and mushroom macaroni cheese
A delicious recipe from Hazel Paterson.
Easy cheat’s chorizo and mushroom macaroni cheese (Around £1.50 per head) Serves 4 generously
Ingredients:
• 500g macaroni
• 1 ring spicy chorizo (or plain if you don’t like spice), sliced into chunky rounds
• 1 knob butter
• 4 garlic cloves, sliced
• 70ml cream sherry
• 300ml double cream
• 1 handful dried mixed mushrooms
• 3-4 tablespoons grated Grana Padano cheese
• 1 handful mature cheddar cheese, grated
• Drizzle of truffle oil and a few basil leaves to serve (optional)
Method:
1. Cook the macaroni in a large pan of salted water according to packet instructions.
2. Melt the butter over a medium heat and add the chorizo pieces, cook for a few minutes then add the garlic and continue to cook until the chorizo releases its golden oil and is starting to crisp.
3. Add the sherry and cook for a minute before adding the double cream and grana padano.
4. Using an electric coffee grinder or Nutribullet grind the dried mushrooms to a powder. Once the cream is bubbling add the mushroom powder and stir well.
5. Once your pasta is cooked, drain and add the sauce, combining well.
6. Put in an oven dish, scatter with the cheddar cheese and grill under a high heat until the top is golden and crispy.
7. Serve with a drizzle of truffle oil if you like and a few torn basil leaves.
