When you think of a cheese for Christmas, you may probably think of Stilton.

The 'king of the cheeseboard' is a special thing that's only made here in the East Midlands. In recent years it's been popular with the older generation, but now due to a craze on Tik Tok and other platforms with recipes using Stilton, including savoury cocktails, it has picked up a following amongst the younger age group that is driving sales. Year on year it has seen a rise of six per cent mainly due to the interest in the cheese from the younger generation.

Bill Mathieson, managing director of Long Clawson Dairy, spoke to 大象传媒 Leicester's Ben Jackson about Stilton's revival, and why Christmas is the Leicestershire dairy's busiest time of year.
