Food Thursday - Buttermilk Biscuits

Ingredients:

Plain flour 350 g
Baking powder 2 tsp
Bicarb of soda 陆 tsp
Sugar 1 tsp
Fine salt 1陆 tsp
Frozen lard, grated 50 g
Frozen unsalted butter, grated 50 g
Buttermilk 200 ml (if you don鈥檛 have buttermilk you can substitute 185 ml milk with 15 ml white vinegar. Let sit 10 minutes before using.)

Instructions:
- Preheat oven to 200 C or 190 C if you have a fan.
- Mix flour, bicarb of soda, baking powder, sugar and salt in large bowl.
- Freeze butter and lard then grate on cheese grater straight into flour mixture.
- Mix together with your hands to coat all the fat in flour. Add buttermilk. Working quickly, stir just until dough is almost blended but still crumbly.
- Turn dough on the counter and pat down to form a rectangle shaped disc, pressing in loose bits in. Cut dough into two sections, stacking one on top of the other. Then press down and repeat at least one more time or until it all sticks together.
- Gently flatten dough in a square shape and then roll with rolling pin, until 陆 inch thick. Keep the shape as best as possible.
- Mark dough before cutting and then portion into even rectangular shapes or cut with 2 inch round cutter. Scraps can be restacked and cut.
- Add cut biscuits to a parchment lined baking tray and brush tops with melted butter (and sprinkle with flakey salt if you have some).
- Bake 15 minutes or until golden brown.
- Enjoy with butter and/or jam or fill with your favourite breakfast items for a breakfast biscuit!
