Yun Hider
The forager Yun Hider
Birdlife on the Norfolk Broads

Dylan joined Mark Cocker, author of Birds Britannica, for one of Britain鈥檚 great winter wildlife spectaculars, sunset on the Norfolk Broads. Thousands of pink-footed geese, colonies of hen and marsh harriers and the extremely rare common crane make their ways back to their roosts as the weak winter sun dissolves.




Razor Clams

Most of us only encounter razor clams when we find their empty shells on the beach but they鈥檙e a popular seafood dish in France and Spain. There are worries that wild supplies are being over-fished so the Centre for Marine Resources in Portaferry is trying to breed baby razor clams for release this summer into Irish waters.



Wild Food

Wild food is hard to come by in the middle of winter but Pembrokeshire forager Yun Hider accepted Dylan鈥檚 challenges. Starting on the beach Yun found plenty of fresh mussels and limpets. Walking from the shore to the woods he collected (very carefully) a bag of gorse flowers and some early wild garlic. Finding a suitable cooking spot in the shadow of a Neolithic burial chamber Yun lit a fire and rustled up a magnificent feast of wild garlic, nettle and alexander soup, followed by a main course of moules marinieres and charcoal-roasted limpets. As Yun warns, please don鈥檛 eat anything from the wild unless you鈥檙e quite certain it鈥檚 safe.
