Taste: Salt 03听Mar 2004
Sybil Kapoor
Salt is as essential to life as water. Its taste permeates all our meals despite the fact that there are few naturally salty foods. Ironically the less salt we eat the more salt we can taste in food. And in fact, over salting can dull our perception of all other tastes as well.

As Randolph Hodgson, cheese afficianado, the owner of Neal's Yard Dairy and a man who has made a very successful business from using his taste buds knows.

Anna McNamee and Sybil Kapoor met up with Randolph where they used his formidable taste buds to test the taste of salt.

'Taste: A New Way to Eat' by Sybil Kapoor published by Mitchell Beazley; ISBN: 1 84000 610 2
