Barbecue Sauce 4听June听2004
An essential ingredient for the perfect summer

According to High Street retail indicators, the one true growth area in consumer spending this summer seems to have been anything connected with barbecues. Anyone would be forgiven for thinking it was a new phenomenon.

The word itself is derived from the Spanish Barbacoa听which refers to cooking in the open air on an open fire.听The English version in fact made its way into the language in the seventeenth century.

Whilst the undisputed kings of barbecuing are the Australians and the Americans, clearly, we're catching up, as Rosie Sykes is now keen to tell us in the second of our series on sauces for summer cooking - with Simon Parkes.
