Pineapple upside-down mug cake
This delicious microwave mug cake is ready in under 5 minutes. Turn out onto a plate if you have the patience, or eat straight from the mug! This recipe can be made vegan if you use plant-based milk.
Ingredients
- 2 tbsp sunflower oil, plus extra for greasing
- 5 tbsp self-raising flour
- 2 tbsp caster sugar
- 3 tbsp milk (you can use dairy or plant-based milk)
- ¼ tsp mixed spice or cinnamon
- 8 pineapple chunks from a tin
- 1 tsp icing sugar, to serve
Method
Lightly grease the inside of a microwave-proof mug with the sunflower oil.
Put the flour, sugar, remaining oil, milk and mixed spice in the mug. Mix well with a spoon then stir in the pineapple chunks.
Microwave on high for 2 minutes, or until well risen. Leave to stand for 2 minutes.
Run a knife around the edge of the cake and place a small plate on top of the mug. Invert the cake onto the plate. Sprinkle with sifted icing sugar and serve.
