This wartime wedding cake recipe was submitted to the People鈥檚 War website by a volunteer from Age Concern Dorchester on behalf of Mary Martin and has been added to the site with her permission. This recipe was used to make the wedding cake to celebrate the marriage of Mary and Kenneth Martin in Cowley on a very special date - VE Day, May 8, 1945. 4 oz. butter if available - margarine if not
1 oz. lard
4 oz. caster sugar
3 eggs (2 yolks and 1 white) or 3 reconstituted dried eggs
2 tablespoons Golden Syrup
2 tablespoons marmalade
1 teaspoon vanilla essence
1 teaspoon almond essence
12 oz. self raising flour
戮 lb fruit or more with cherries
4 oz. prunes (cooked)
录 tablespoon bicarbonate
6 teaspoons orange squash
Beat butter and sugar. Add eggs. Sift in flour. Add fruit. Add squash
Cook for 3 hours at 300 degrees.
