Weekly rations were;-

4oz. Butter 2 oz Preserves
8oz. Sugar 2pt. Milk
4oz. Bacon/Ham 2oz. Cooking Fat
2oz. Tea 4oz. Cheese
1 egg 3oz. Sweets
14oz. Meat

My aunt (Mrs.Shaw) kept "a little black book" of recipes of all sorts that she made during the war, i.e. chutneys, wines, cakes and miscellaneous tips of all kind.

I give just a few simple recipes as an example of how people did cope on rations.

Wartime Salad Cream or Mayonnaise:

1/2 time Milk
1/4pt vinegar
1 egg yolk
1 tblsp. sugar
1 teasp. celery salt
1teasp.pepper
1 dessertsp.mustard
MIX: Mustard, pepper, salt,sugar into egg yolk, add milk then vinegar drop by drop. Put in double saucepen and boil till thickens. (tip: a bit of grated horseradish makes a nice flavour)

Lemon Cheese Curd

1 teacupful sugar
3oz marge/butter
2 eggs
rind of 1 and juice of 2 lemons

Put butter, sugar, lemon rind and juice in a saucepan or basin.
Beat eggs, put into saucepan or basin and stir quickly when butter has melted.
Cook for 20-30 minutes.
(comment: very good recipe)

Xmas Cake

2 cupsful fruit
1 cupful sugar
1 cupful water

Boil together then cool.

Rub 2oz. marg into 2 cupsful plain flour, 1 teasp bicarb and 1 teasp baking powder.

Stir into cold fruit, put into a loaf time and bake for 1.1/2 house (slow oven)

(Comment: Tried and is really delicious)

Bakewell Tart

Line tin with short or puff pastry
Melt in saucepan a good tablespoon of butter and to it add 2 tablespoons sugar, 4 tablespoons ground almonds, a few drops of almond essence and 1 beaten egg. Mix the ingredients thoroughly
Put a little jam in the pastry base, pore over almond mixture and cook in mod. oven

(no timing was given so presumably it would be for 25-3o minutes)

Other tips:(Miscellaneou)

To stop hair falling out: Dried parsley seeds and rub powder into hair sparingly

For wrinkles: Rain water, barley a handful, boil together and to it add some white balsom. Use once a day

For pimples: salt-petre - wet it and dab the spots.

To make hair grow quickly: Take the juice of nettles, stew them for a short time with a little water and comb hair in upward movement.

For the voice: Take a dram of elderflowers and put into some white-wine vinegar.

I don't know whether any of the tips worked or not but my aunt survived to a very good age.

I even found a knitting pattern for Bed socks which we made for sending abroad during the war, however today bedsocks are not really needed as much because of central heating. During the war bedrooms were icy cold in winter with ice on the inside of the windows when you got up in the mornings.
