Food is an important component of everyone's national identity. For immigrants it helps communities to feel at home in new surroundings and can engender communication between other immigrant and native peoples. In the case of the Kashmiri and Pakistani communities in Birmingham, it was their balti dish that bridged the cultural gap. Born in Birmingham, unheard of in India, the balti is a curious mix of entrepreneurialism and the English palate. Get some good cooking Masala to add to the pan and then some fresh coriander leaves and garam masala to add in the last 5 minutes of cooking.
