Yorkshire Tea Cakes

6oz Flour
¼ oz German Yeast
¾ oz Butter
½ Egg
About 1 gill milk
1 teaspoonful castor sugar
A little fruit may be used (1 oz)

Method
Warm a basin
Sift into it the flour and a pinch of salt
Melt the butter
Add to it the milk and allow it to become tepid
Cream the yeast and sugar together
Beat up the egg a little
Add it to the yeast
Add to them the milk and butter
Add these to the flour gradually to make a soft consistency and beat well with a spoon
Turn onto a floured board
Divide into 6 equal portions
Have ready 6 greased plain patty tins
Place the dough in these
Put in a warm place to rise from ½ hour to ¾ hour
Brush over with a little egg or milk
Bake in a hot oven for about 15 minutes
If fruit is added it should be cleaned and added to the dry flour.
