Beef Ho Fan
Ingredients:
Steak
400g rump steak – cut thinly against the grain
2 tbsp of light soya sauce
1 tsp dark soya sauce
1 tsp sesame oil
1 tsp of corn flour
1 tbsp of Shaoxing wine or white wine or cider vinegar
½ thumb of ginger finely sliced into strips
2 cloves of garlic minced
5 spring onions - cut into 2 - inch long pieces and cut in half lengthways for the white stalk
1 medium onion finely sliced
200g beansprouts
Noodles
800g fresh ho fun noodles
(otherwise dried thick rice noodles - revive in boiling water
for a couple of minutes)
(Or make your own – 2 cups rice flour + 1 cup corn flour + 3 cups of water – whisk and pour batter into a greased tin to go into a steamer – 3-5 minutes, then lightly brush with oil – and stack – cut)
Sauce
5 tbsp light soya sauce
2 tbsp of dark soya sauce
1 tsp sugar
1 tsp black vinegar (or cider vinegar)
Method:
1. Marinade the beef for at least 15 minutes.
2. Fry off the beef using vegetable oil in batches for maximum of couple of minutes – rare/medium is fine, remove and put the beef aside (do not clean the pan).
3. Then add a little bit more oil to the pan if there is no oil left in the pan. Then fry off the onions and add about 2 tbsp of water, cook for a couple of minutes till water is evaporated and onions are softened and till just catching colour.
4. Then add the ginger and garlic. Fry for a couple of minutes till fragrant. Then add in the noodles and then add in the sauce, quickly toss for a couple more minutes till noodles are soft.
5. Then add in the beansprouts and spring onions and then steak cook for another couple of minutes. Then it is ready to serve
