Ultimate Grilled Cheese

Ingredients:

Grilled Cheese

2 slices of evenly sized sourdough (or sandwich loaf)
100g-150g of your cheeses of choice (grated) – can have 3 or 4 mixed in. Or if you only have cheddar that is fine too!
Another 20-30g grated cheese for topping
Butter
A chutney of your choice
1 egg
1 round pastry cutter (approx. 2 inches)

Method:

1. Using the cutter, gently cut into the middle of the sandwich –take the cutter out but leave the circle of bread in place.

2. Generously butter both sides of each slice of bread.

3. Fry off in the pan directly 1 side of each bread till golden.

4. Then on a piece of parchment paper place both toasted sides up- spread chutney on both sides.

5. Then place as much grated cheese on top of 1 of chutney spread pieces of bread.

6. Then sandwich the other piece of bread on top of it.

7. Now place the sandwich into the pan and fold over the parchment paper.

8. On a low/medium heat – place heavy pan on top – this makes sure the sandwich gets really golden brown on the bottom.

9. After about 5-7 minutes check the bottom of the sandwich by peeling away the parchment paper – then flip if it is golden brown with crunchy crispy edges.

10. Repeat on the other side – the parchment paper protects the sandwich from directly burning too quickly.

11. Place a small square of doubled up parchment on the pan beside the sandwich. Then place the pastry cutter on top of it, grease the inside of the ring with a pastry brush or some kitchen roll. Crack the egg gently into it and hold down the pastry cutter ring in case egg white escapes at the start. At about 5 minutes (on the other side)– gently ease out the cut-out circle, yes it will be very cheesy. Then place the nearly cooked egg into the middle of the sandwich. Then let the white of the egg fully cook.

12. Carefully take out the sandwich, make sure the fish slice is under the egg when lifting it out.

13. Served with a delicious fresh salad.
