He explores the quintessentially British county of Gloucestershire and feasts his eyes on the rolling beauty of the Cotswolds where he celebrates the wonders of wild River Severn salmon and finds out why one farmer thinks his land produces the country's best virgin rapeseed oil. On his journey he cooks a poached wild Severn salmon with asparagus and hollandaise, plus Cotswold ham croquettes with garlic rapeseed mayo.
