From Vietnam, where the food is light and fresh, he is inspired to make a Vietnamese turkey salad and further down on the volcanic island of Bali he learns how to make the ultimate Nasi Goreng. As a festive treat, Rick and his chefs conduct a very special coffee taste test and finally, to savour the memories of his time in Sri Lanka, Rick creates a delicious cashew nut curry.
