The Ark of Taste: Stellendam Shrimp
In the Souternmost delta islands of the Netherlands, shrimp are caught and cooked on board by fishermen from the nearby town of Stellendam. For many centuries, the peeling was done by local families around the kitchen table, but regulations disallowed this in 1990. Now, only one remaining hand-peeling building in Stellendam remains, but the need for more employees is ever increasing as the shrimp begins to be rediscovered again.
