Uganda and Rwanda: Matoke
This green fruit is a variety of banana and usually used in cooking when it鈥檚 unripe. Matoke is steamed, wrapped in banana leaves then mashed. It can be served on its own or with stew. The dish is popular in Uganda and Rwanda.
