Vegan banana bread with raspberries

ÌýThis vegan banana bread can be eaten any time of day. If you don’t have raspberries, any other fresh or dried fruit will do.

IngredientsÌý

·ÌýÌýÌýÌýÌýÌýÌýÌý 3 large very ripe bananas

·ÌýÌýÌýÌýÌýÌýÌýÌý 75g vegetable oil or sunflower oil plus extra for greasing

·ÌýÌýÌýÌýÌýÌýÌýÌý 100g brown sugar

·ÌýÌýÌýÌýÌýÌýÌýÌý 225g plain flour

·ÌýÌýÌýÌýÌýÌýÌýÌý 3 heaped tsps. Baking powder

·ÌýÌýÌýÌýÌýÌýÌýÌý 3tsp cinnamon or mixed spice

·ÌýÌýÌýÌýÌýÌýÌýÌý Handful of fresh or frozen raspberriesÌý

MethodÌý

Preheat the oven to 200C/180C.ÌýÌý

In a large bowl mash your bananas with a fork. Add the oil and brown sugar.


Add the flour, baking powder, spice and combine well.Ìý

Add the raspberries.Ìý

Bake in a greased and lined 2lb loaf tin for 30/40 minutes. Check after about 20 mins and cover with foil if the top of the cake is browning.Ìý

Allow to cool before slicing.

IngredientsÌý

•ÌýÌýÌýÌýÌýÌýÌý 1 tbsp vegetable oil

•ÌýÌýÌýÌýÌýÌýÌý 1 onion

•ÌýÌýÌýÌýÌýÌýÌý 2-3 cloves of garlic finely chooped or grates

•ÌýÌýÌýÌýÌýÌýÌý 1 carrot

•ÌýÌýÌýÌýÌýÌýÌý 1 red chilli finely chopped

•ÌýÌýÌýÌýÌýÌýÌý 250g squash boiled then mashed

•ÌýÌýÌýÌýÌýÌýÌý 1 tbsp curry powder

•ÌýÌýÌýÌýÌýÌýÌý 1 tsp smoked paprika

•ÌýÌýÌýÌýÌýÌýÌý ½ tsp cumin

•ÌýÌýÌýÌýÌýÌýÌý 115g red lentils, pre boiled til tender

•ÌýÌýÌýÌýÌýÌýÌý 25g or so of breadcrumbs – these could be dried breadcrumbs or from a loaf or roll

•ÌýÌýÌýÌýÌýÌýÌý More oil for fryingÌý

MethodÌý

Heat oil in a large pan over a medium heat. Add the onion, garlic, and carrots then reduce the heat to low and cook for approx. 5 mins (until softened)ÌýÌý

Add the mashed squash, curry powder, smoked paprika & cumin then stir for a further minute.Ìý

Add the pre boiled lentils.Ìý

Transfer the mixture to a mixing bowl and allow to cool. Add the breadcrumbs then stir until combined.ÌýÌýÌý

Divide the mixture to form burgers.ÌýÌý

Heat the oil in a large frying pan over a medium heat. Cook the patties for 4-5 minutes each side or until golden and warmed through.
