Vegan and gluten free peanut millionaire shortbread

This gluten and dairy free tray bake is really simple and totally delicious
Ingredients
· ½ cup vegan butter
· 2 ¼ cup gluten free plain flour
· ¾ tsp xanthan gum
· ½ cup sugar
· ¼ cup ground almonds
· ½ cup vegetable oil
· Peanut butter
· Vegan milk or dark chocolate melted
Method
Crumb the butter and flour.
Add everything except oil and stir well.
Add oil and combine with hands to a dough. Add a drop extra oil until it comes together.
Chill for 20 mins.
Bake at 170 fan for 25 mins.
Allow to cool and top with peanut butter. If peanut butter is too hard to spread warm it a little on the hob. Then top with the melted chocolate and allow to chill In fridge minimum 1 hour.
Vegan and gluten free blondie

This is a throw it all together and mix bake. Great for getting kids involved. Just make sure you check that your baking powder and bicarbonate of soda don’t have wheat flour in them if you need the recipe to be gluten free.
Ingredients
· 1 cup of peanut butter
· ½ cup plus 4 tbsp of vegan milk of your choice
· 1 ½ cups sugar
· 1 ½ cup gluten free self-raising flour
· ½ cup oats
· 4tsp vanilla extract
· ½ cup vegan chocolate (milk, white or dark) chopped
· ½ tsp gluten free bicarbonate soda
· ½ tsp gluten free baking powder
· ½ tsp cinnamon
· Generous pinch of salt
Method
Mix everything bar the chocolate together in a large bowl. Pour into a 9x9” baking tray and sprinkle the chopped chocolate over the top – pushing the chunks down into the mix.
Bake in a preheated oven at 150 C for a fan, 170 in a conventional oven
