Barbecue sauceThis can be used as a marinade for meat or as a sauce to serve with barbequed meats especially sausages.1 onion, finely sliced 3 cloves garlic, finely chopped 25g ginger, finely chopped 2 tbsp olive oil 75g dried apricots 175ml white wine 150ml tomato juice 150ml orange juice 100g roast peppers 0.25 tsp chilli powder 2 tbsp honey 2 tbsp Dijon mustard salt & pepper听 听 Heat the oil and add the onions, garlic, and ginger and chilli powder and soften over a low heat with a lid on for at least 10 mins, stirring from time to time. Add the dried apricots, wine, juices and roast peppers, simmer for 30 mins, stirring to stop any sticking. Add the honey and mustard, season to taste and whizz up in a robot. It may well be quite thick so add a little water, pass through a sieve and when cold it can be used to marinade any manner of meats. Back to the recipe page |
