Indian spices reflect my culture and heritage. The spices are derived from tree bark and flowering plants, creating their individual smell and taste.
Both my parents have Indian heritage but my father is from Kenya and the spices there are quite different from the ones in India.
This spice is made from pepper, cloves and various other things and has a really pungent smell.
In India spices are intially simmered in oils to kill off bacteria whereas in the UK the spices are added during the cooking.
Some of the spices are from tree barks and some are from flowering plants.

I was surprised by the comment that Vanilla does not grow here as I know where a large bush of English VANILLA is growing outside in public gardens, in a village near Teignmouth, S. Dorset! The strong smell close by is quite unmistakable!
