Burrata recipes
Burrata is a rich, creamy cow's milk cheese, typically from the south of Italy. Fresh mozzarella curds are shaped and kneaded in hot whey, before being sealed with a filling of mozzarella and cream. The result is a cheese with wonderful textural contrast – when you cut into the curd, the thickened cheese and cream (called 'stracciatella') oozes out.
Burrata is often served as a starter or with bread, olive oil and other Italian antipasti.
