Kimchi recipes
Kimchi is a Korean pickle made with fermented vegetables, such as cabbage and radish. The vegetables are salted, then preserved in jars with flavourings such as chilli, ginger and garlic. Delicious with rice, eggs and sandwiches, you can buy it ready-made or make it yourself.

Kimchi is surprisingly easy to make and makes a great addition to rice dishes or a pork sandwich.
Please note, if mould forms on your kimchi at any point, discard the batch and start again.
For this recipe you will need a large mixing bowl, colander, disposable or new clean rubber gloves, 1-litre/1戮-pint wide-mouthed clip-top jar and a large spoon.
