His determination to learn and pursue his dream led him to become chef de partie at the Fat Duck (3*) under Heston Blumenthal, The Ledbury (2*), Murano (*) with Angela Hartnett, and at Gridiron in London.
With over 24 years of experience, Colin has truly learnt the importance of precision, attention to detail, and creativity in cooking from the best.
He moved back to Northern Ireland to spend time with his growing family in 2021, working for his friend at Yugo in Belfast in the short term. Since November 2023, Colin has been doing monthly pop-ups in a local restaurant called Graphite, which showcases his culinary skills, and supports his friend with his plant-based café Birch in Newcastle.
These experiences allowed him to expand his knowledge and explore different cooking techniques and styles, and now Colin’s style is all about honouring the ingredients. His use of live fire cooking gives the produce a more unique and interesting depth of flavour, and his love for art also shines through his presentations, where he meticulously arranges each dish to be a feast for the eyes, as well as the taste buds.
