Yvonne's Sweet & Savoury Samosas
Vegetable Samosa
Makes about 10-12 samosas
Ingredients:
2 medium size potatoes, cubed
Handful of finely chopped trimmed green beans (about 10 green beans)
Handful of finely chopped cauliflower (about a quarter of cauliflower)
1 small red onion, finely chopped
Olive oil for frying ½ tsp chilli (can increase if want more spicy kick!)
1 tsp turmeric
1 tsp cumin seeds
1 tsp ground coriander
Small handful of chopped fresh coriander
8 sheets of filo pastry
Raita sauce – small tub of full fat Greek yoghurt, 1 crushed garlic, seasoning, 1 tsp of fresh mint, 1 tsp of coriander
1. Steam potatoes and vegetables until just tender. Leave to cool
2. Gently fry the red onion with olive oil. Add spices. Add very little water if necessary.
3. Add the potatoes and diced vegetables and gently mix together for few minutes.
4. Take out the filo pastry sheets from the fridge. Cover it with clean damp tea towel, and take out one filo pastry at a time and wait till reaches room temperature
5. Cut each sheet with 3 long strips. Add a tablespoon full of the mixture at the top of each strip.
6. Fold down in triangle until you reach to the bottom of the strip. Add water to the edge to close it properly.
7. Brush samosa with melted butter.
8. Bake in the air fryer for about 10 minutes at 200C, or 35-40 in oven at 200C until golden brown and crispy. (turn halfway!)
9. Serve with cooling raita sauce in a small bowl
10.Serve immediately
Chocolate Samosa
Makes about 16 tortilla samosas
Ingredients:
8 large round tortillas, cut in half
2 medium jar of good quality chocolate sauce/spread
3 large banana, largely chopped
Melted butter for brushing
Small bowl of 2 tbsp of plain flour and 4 tbsp of water, mixed together
Small bowl of 2 tbsp icing sugar and 1 tsp of cinnamon powder mixed
Fresh strawberries on the side
1. Make the flour paste in a small bowl and leave aside
2. Slice the bananas
4. Cut the tortilla wrap into half
5. Roll each halved wrap into a cone, and seal it with the flour paste
6. Add 3 large dollops of chocolate sauce
7. Add 3 banana slices
8. Seal at the top with the flour paste, and you will now have a triangle shape cone
9. Brush with melted butter, making sure it is all well coated
10.Air fry them for about 8 mins at 200C, or oven for 30min at 200C -
11.They come out very hot, so best wait for about 10 minutes until it is at the right temperature to eat!
12.Sieve at the top with cinnamon sugar coating
13.Serve with fresh chopped strawberries
