Hong Kong Chicken Wings
Ingredients
500g chicken wings
1 tsp Sesame oil
5 tbsp light soy sauce
6 tbsp runny honey
1/2 tbsp garlic powder
1 garlic clove
1 red chilli
15g of fresh ginger
Pinch of salt
Pinch of white pepper
1 tsp sesame seeds
Method
Parboil your chicken wings starting them off in cold water
Create your marinade by mixing 3 tbsp of honey, a pinch of white pepper, 1/2 tbsp of garlic powder, 1tsp of sesame oil and 3 tbsp of soy sauce in a bowl
After around 5 minutes of boiling, use a spoon to scoop out any impurities that have risen to the surface
Remove the chicken wings from the pot, place them straight into the marinade and toss through
Allow to marinade for at least 5 - 10 minutes
Transfer the wings to a lined baking tray and brush some of your marinade over them
Place in your preheated oven at 180 degrees for an initial 10 minutes
Baste the wings with any remaining marinade
Pop them back into the oven for another 5-10 minutes
Slice up a knob of ginger, one chilli and bruise a clove of garlic
Add these to a pan with 3 tbsp honey and 2 tbsp of soy sauce and let it simmer on a low heat
Once the sauce can coat the back of a spoon, fish out the pieces of ginger, garlic and chilli and take it off the heat
Sprinkle some sliced spring onion on the dipping sauce
Remove your wings from the oven and garnish with sesame seeds
