GRANNIE'S OATCAKES - HIGHLAND OATCAKES

½ lb oatmeal
½ tsp salt
¼ small tsp soda
1 tbsp melted fat
About ½ cup hot water

Heat gridle slowly on the stove.
Mix the oatmeal with the salt and the soda.
Melt the fat with the hot water from the kettle. Make a well in the centre of the dry ingredients, pour in melted fat and bring together to make a stiff dough.
Turn on to a work surface scattered with oatmeal and knead thoroughly.
Roll out thinly into a circle, ¼ inch thickness, and slide onto the heated gridle. Cut into triangles and cook over a moderate heat till the edges curl.
Finally put it under grill till crisp.
