John's Gethinator Burger

Here's what you'll need (serves 4):
- 2 tbsp groundnut oil
- 1 tbsp olive oil
- 500g beef mince 20% fat
- 4 tsp steak seasoning
- 200g chestnut mushrooms, thinly sliced
- 1 onion, thinly sliced
- 4 slices Gouda cheese
- 4 eggs
- 4 brioche burger buns
- Baby gem lettuce to serve
- Mayonnaise to serve
- Salt & Pepper
Here's how to make it:
- Put the beef into a bowl. Add the steak seasoning and a good pinch of salt and mix well. Roll into 4 balls.
- Heat 1 tbsp of the groundnut oil in a large non-stick frying pan over a high heat. Throw in the chopped onion and mushrooms and a good pinch of salt and pepper. Leave for 1 minute to get some heat into them and then cook, stirring occasionally, for 4-5 minutes until golden.
- Transfer to a warm plate.
- Reheat the pan over a medium heat and add the remaining groundnut oil. Add the burger balls, leaving plenty of space around each one.
- Squish them with a metal turner until just under 1 cm thick. Cook for 5-6 minutes, turning every few minutes, or until cooked through.
- Meanwhile, heat the oil in a non-stick frying pan over a medium heat and crack in your eggs. Season with salt and cook until the whites have set.
- Turn the heat off under the burgers and top each with a cheese slice. Cover the pan with a lid and leave for 30 seconds – 1 minute to melt the cheese.
- Spread your sauce of choice onto the burger buns. Top each with crunchy lettuce and juicy mushrooms. Add the burger patty and your fried egg and tuck in!
